Tasting Notes: Toasted Almond, Pear, Chocolate

For us, coffee is about relationships. These relationships throughout the supply chain are the foundation 8th & Roast is built on, and this coffee from our friends at Finca Concepción Buena Vista in Chimaltenango, Guatemala is the example that sets the bar for that level of transparency.

Since 2021, we have been working directly with the Solano Family, who are fourth generation coffee farmers in the community of San Martin Jilotepeque in the Guatemalan department of Chimaltenango.

This outstanding washed-process yellow bourbon varietal coffee is grown between 1650-1800 meters above sea level, and is as delicious as it is approachable. This coffee gets better every year, and we're happy that we can now say we buy the entire lot every year.

A Reminder That South American Coffee Rocks

    Oct 28th 2025

I tend to gravitate toward Ethiopia and Kenyan coffees. But I loved being reminded that Central and South America coffees also rock! Loved, loved this. In wine tasting they use the term "long in the finish" and that is what this has, V60 pour over was my choice of brewing. Switched to the Kalita wave as the coffee headed toward 3 weeks past roast date. In my opinion the Wave brewer pulls out the deeper notes when some of the top notes fade.

View all FAQs »

what is the difference between single origin coffee and coffee blends?

single origin coffee comes from a specific geographic region, or in 8th & Roast’s case, a farm or family of farms. this allows for a dialed-in flavor profile that carries the trademark of the area where the coffee was grown, with elements like climate, elevation, and soil as factors. blends are created when our roasters combine coffees of a different origin and/or process in a deliberate way, creating a unique flavor profile.

where do you roast your beans?

our roasting facility and training lab is located in the heart of nashville at 2637 grandview ave. while it is not open to the public on a daily basis, it is where we host our community classes.

i want to learn more about coffee. do you offer classes?

we offer classes occasionally, with topics ranging from ‘coffee 101’ to ‘latte art’ to ‘home brewing and extraction.’ check out our classes page for the most updated information.

how do i store my coffee?

try to avoid heat, light, moisture, and oxygen to keep your beans at their freshest. our bags are designed for great storage, and we recommend keeping them in a dry, dark pantry for optimal storage. we don’t recommend storing beans in the refrigerator.

what is common voice?

Common Voice is the sister brand of 8th & Roast Coffee Co. originally launched by good citizen coffee, it is now part of the 8th & Roast family when we acquired the brands. common voice provides more people with access to boutique coffee and enables farmers to sell more of their available crops year after year. the resulting blends are produced and processed to the same standards as all our coffees.
